My Kitchen View

I'm getting back in the cooking groove. I had some apples starting to get a little soft, so I made a big batch of unsweetened applesauce and planned to freeze it but we've been eating it instead. It is probably one of my kids' top favorite side dishes!

We recently enjoyed pasta with a homemade creamy tomato parmesan sauce.



I love apple season so we had Apple Crisp for Sunday dinner. Topped with vanilla ice cream, of course!



And I made a roast in the slow cooker cooke with apple cider.

  2. Hi Hannah -

    Here's the approximate sauce recipe - I didn't really measure. :)

    Cook until mostly done:

    3-4 slices of bacon cut into pieces

    Add:

    1 onion, diced

    Saute until bacon is done and onion is nearly tranluscent. Add:

    2 garlic cloves, minced

    Saute a couple of minutes more. Add:

    1 can diced tomatoes
    1 can tomato sauce
    (you could use fresh and cook them down and crush them)
    1/4 c. sliced basil
    Salt & Pepper to taste

    Simmer for 15-20 minutes. Finish with:

    1/4 c. heavy cream
    1/2 c. fresh parmesan

    add 1 lb. cooked pasta (reserved some pasta water to add to the sauce if needed) and toss together adding pasta water to loosen sauce (maybe 1/2 c.)

    Garnish with fresh basil and parmesan.
