Market Fresh: Butternut Squash

Butternut Squash is my favorite winter squash. I love its mild, sweet taste and its bright orange color. I've been noticing the suggestion this fall of using butternut squash puree in place of pumpkin puree in your favorite pumpkin recipes. Sounds like a good idea to me!

  1. Butternut squash is also excellent simply boiled in salted water and then mashed with plenty of creamy butter, salt and freshly ground butter. You could add fresh chopped herbs as well (I'm thinking oregano, basil, maybe rosemary, snipped chives, etc). The taste is amazing!! Especially when served with a tender roast, gravy and potatoes...
