Chocolate Teff Brownies

My husband and I were invited to a cook-out recently. He knew the couple hosting the event; I didn't know anyone. I volunteered to bring a dessert so that there would be something gluten-free available for my husband. A look through my pantry and through my favorite cookbook (as you likely know by now!), Nourishing Meals, and I settled on some Chocolate Chip Teff Brownies with an added dairy-free ganache. They were absolutely delicious and received rave reviews from the party goers.

Dry Ingredients
1 c. teff flour
1/4 c. tapioca flour
1/3 c. cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp sea salt

Wet Ingredients
1/2 c. dates, pitted
1/4 c. ground flaxseeds
1 1/4 c. boiling water
1/2 c. coconut oil
1/2 c. coconut sugar
2 tsp vanilla

Mix-in
1/2 c. chocolate chips

Preheat oven to 350ºF. Grease a 7 x 11 baking dish.

In a mixing bowl, whisk together the dry ingredients. Set aside.

Place the dates and ground flaxseeds into a blender; pour the boiling water over them. Let sit for 10 minutes. Then add the rest of the wet ingredients and blend until smooth and creamy.

Add the wet ingredients to the dry and quickly whisk together. Add the chocolate chips and continue to whisk until thoroughly combined.

Pour better into pan and bake for 20-25 minutes.

Chocolate Ganache Frosting

3 oz chocolate chips
1/4 c. coconut milk
2 Tbsp maple syrup

Place all ingredients into a small pan and heat over low. Stir continuously until melted and thickened, just about 2 minutes. Remove from heat and let cool for about 5 minutes. Do not chill. Drizzle over brownies.

Or, if you would like a thick, creamy, spreadable frosting then let the ganache thicken at room temperature for about 3 hours.

Chocolate Coconut Milk Ice Cream

Here's a delicious treat for your weekend! This is a recipe that I posted a long while back, but it is buried in a post with another recipe. And since it is quick and fairly healthy, I decided to re-post. Plus, it's summer, so who doesn't love some ice cream?!

I should note that the original recipe is  not mine; however, I do not remember where I found it. This time around I did add a 1/2 teaspoon of almond extract, which was a nice twist.

Healthy Chocolate Peanut Butter Cups

We love Reese's Peanut Butter Cups! We don't eat them often because I'm anti-all the garbage additives. So, I thought I'd give this refined sugar-free recipe a try (unlike usual, I followed the original without any alterations). While they aren't Reese's, per se, they are sweet, peanutty and chocolatey, all good things! :) With coconut oil in the ingredient list, these definitely have coconut undertones, if that's not your thing, you could try butter and see how that works. If you want a thicker layer of chocolate (I think I might), just double the ingredients for the chocolate layer. I hope you enjoy!

For peanut butter layer:
3/4 c. natural peanut butter
1/4 c. coconut oil
2 Tbsp raw honey

For chocolate layer:
2 Tbsp coconut oil
2 Tbsp butter
2 Tbsp unsweetened cocoa powder
2 Tbsp raw honey

For the peanut butter layer: Line mini-muffin pan with papers. Melt the coconut oil, then mix together with the peanut butter and honey. Carefully pour into prepared pan. Place in the freezer while preparing the chocolate.

For the chocolate layer: Melt the coconut oil and butter together. Add the cocoa powder and the honey. Stir until smooth. Remove the pan from the freezer and evenly pour the chocolate into each cup. Freeze for at least 15 minutes before serving.

Store in the fridge or freezer. Makes about 24.

Peanut Butter Fudgy Bites

Jeremy and I have a rather bad habit of wanting something sweet after dinner. I didn't grow up having dessert every night, but I find that my mind wanders to a bite of sweet almost every evening. Most often we'll enjoy a little dark chocolate, but I've been experimenting lately with finding some "healthy" treats for us to enjoy. The next few recipes I plan to share with you are some these sweets. So, perhaps you too can healthfully satisfy your post-supper sweet tooth.

First up, is a recipe that I now can't remember where I found; however, in typical fashion, I've adapted the recipe anyway to suit our tastes. We love the classic combination of peanut butter and chocolate, so are fond of these. As they are raw treats, be sure to store in the fridge. (Sadly, these little bites are really unattractive to photograph...I hope that won't deter you from trying them. :))

PEANUT BUTTER FUDGY BITES

15 pitted dates, rough chopped
1/2 c. peanut butter
1/3 c. shredded unsweetened coconut (my coconut is larger flakes, so I've been using a packed 1/2 cup instead)
2 Tbsp unsweetened cocoa powder
1 tsp vanilla extract
3 Tbsp chocolate chips

Place the dates in a food processor fitted with the chopping blade and process into smaller pieces. Add the remaining ingredients and process until thoroughly combined and ingredients form a "dough." Roll into balls.

Flourless Chocolate Cake

For all you chocolate lovers, I have the perfect dark chocolate cake for your Valentine's Day celebration! I dusted mine with some powdered sugar, but this would be lovely with a chocolate glaze, a thin layer of icing, whipped cream, or a puree of berries. It's delicious, simple to make, and naturally gluten-free! Plus, Jeremy gave it two thumbs up. So, whether you're dining out or in, make sure you end your night with something sweet.

As a conversational aside, for my wedding 3 1/2 years ago someone gave me a His and Hers heart shaped baking pan. I decided this was the perfect opportunity to try it out. The batter was a little too much for these, but I still thought the heart shape was fun for the occasion. (I definitely would not buy a pan with such infrequent uses, but I guess it's fun to use every once in awhile, since I already own it! :) )

FLOURLESS CHOCOLATE CAKE
(ever so slightly adapted from epicurious.com)
Print This Recipe

4 oz quality, bittersweet chocolate (I used a 72% cacao)
1 stick unsalted butter
3/4 c. sugar
3 large eggs
1/2 c. unsweetened cocoa powder
1/2 tsp vanilla extract

Preheat oven to 375°F. Butter an 8-inch round baking pan. Line bottom with wax paper and butter paper.

Chop chocolate into small pieces. Cut butter into 8 pieces. In the top of a double boiler or a bowl set over a saucepan of barely simmering water melt chocolate with butter, stirring, until smooth. Remove the bowl from heat and whisk sugar into chocolate mixture. Add eggs and vanilla and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined.

Pour batter into pan and bake for 25 minutes, or until top has formed a thin crust. Cool cake in pan on a rack for 5 minutes and invert onto a serving plate. Garnish as desired.

(When completely cooled, cake will keep in an airtight container up to 1 week.)

Grandma's "Forget Me" Cookies

These cookies spend at least 8 hours in the oven, thus they are "forget me" cookies. And I actually did forget about mine for a few hours. :)

I had some trouble with my egg whites beating to stiff peaks. At first I thought possibly my bowl wasn't completely grease-free. But then, after making a second batch in a different bowl, I decided it was because the recipe didn't use any cream of tartar. So, I'm adding that to the recipe below and you should be set.

These are delicious--light with plenty of chocolate chips and pecans studding each cookie (Grandma was fond of that combination!). They aren't terribly pretty, but they certainly taste great!

GRANDMA'S "FORGET ME" COOKIES
Print This Recipe

2 egg whites, set out for 30 minutes before whipping
dash of salt
1/4 tsp cream of tartar
3/4 c. sugar
1 tsp vanilla
6 oz semi-sweet chocolate chips
1 c. chopped pecans

Preheat oven to 350°F.

In a grease-free bowl beat egg whites until foamy. Add the salt and cream of tartar and beat until soft peaks form. Gradually add sugar, one teaspoon at a time, beating on high until stiff peaks form. Fold in the vanilla, chocolate chips, and pecans.

Drop by tablespoonfuls onto cookie sheets lined with parchment paper (or aluminum foil with the dull side facing up). Place in the oven and immediately turn off the heat. Do Not open the oven door for at least 8 hours.

Makes 3 dozen.

Cocoa Chocolate Chip Meringues

I'm going to squeeze in one more chocolate treat recipe for you. Made with whipped egg whites and sugar, meringues are much lower in fat than the average Christmas cookie or candy. This particular recipe is flavored with cocoa powder and chocolate chips and the chocolate flavor certainly shines through. These aren't overly sweet, making them a nice change. And, as an added bonus, they are naturally gluten-free.

My husband and I both enjoyed these crispy little cookies. I know they'll become a regular holiday treat in our house.

COCOA CHOCOLATE CHIP MERINGUES
(from Gluten-Free Christmas Cookies by Ellen Brown)
Print This Recipe

3 large egg whites, at room temperature
1/4 tsp cream of tartar
pinch of salt
3/4 c. granulated sugar
1/3 c. unsweetened cocoa powder
1/2 tsp vanilla extract
1 c. miniature chocolate chips

Preheat the oven to 275°F. Line two baking sheets with parchment paper.

Place egg whites in a grease-free mixing bowl and beat at medium speed with an electric mixer until frothy. Add the cream of tartar and salt, raise the speed to high, and beat until soft peaks form. Add sugar, 1 Tablespoon at a time, and continue to beat until stiff peaks form and meringue is glossy. Beat in cocoa and vanilla. Gently fold in chocolate chips.

Scoop meringue into either a pastry bag fitted with a large star tip, or into a ziploc bag with the corner cut off. Pipe the meringue through bag of choice by heaping 1-Tablespoon portions onto prepared baking sheets. Bake for 30 minutes. Turn off the oven, and allow meringues to stay in the oven for an additional 30 minutes. Transfer to a cooling rack to cool completely.

Makes 3 to 4 dozen depending on size.

Peanut Butter Pretzel Truffles

Have you been on pinterest? It's this amazing site that is really like an online scrapbook of ideas. It makes you feel completely inadequate and empowered all at the same time. There are so many categories like cool crafts, awesome looking recipes, fashion ideas, and even fitness plans. Anyway this is actually not a commercial for pinterest but it is where I found this recipe. They were called Chubby Hubby Truffles (after some rather well known ice cream) or Peanut Butter Pretzel Truffles.

These are quick, very easy, and they look really nice. They are a wonderful combination of salt and sweet and the creamy peanut butter is a nice texture with the crunch of the pretzels. In full disclosure - I was not thrilled with how big I accidentally made them. These are really good!

Peanut Butter-Pretzel Truffles
adapted from Brown Eyed Baker

Makes About 18-24 truffles

1½ c. pretzel pieces
½ c. creamy peanut butter (I used Skippy)
1 Tb. unsalted butter, at room temperature
2 Tb. light brown sugar
3 Tb. powdered sugar
1 1/2 c.  milk or semisweet chocolate chips
1 Tb. vegetable shortening

Put the pretzel pieces into a resealable plastic bag and crush into very small bits - I used my food processor.

In a small bowl, combine the peanut butter, butter, brown sugar and salt. Stir until all of the ingredients are completely blended and smooth. Add the pretzel bits to the peanut butter mixture and mix thoroughly. Add the powdered sugar and mix until completely combined.

Line a small baking sheet or plate with wax paper. Using a small cookie scoop, or about 2 teaspoons worth of peanut butter mixture, gently roll  into a ball (I put a little butter on my hand to reduce sticking and had to wash my hands after every 5 or so). Place the ball on the wax paper-lined cookie sheet and repeat with the remaining peanut butter mixture. Place the baking sheet into the refrigerator and chill for at least 30 minutes.

When ready to dip the truffles, microwave the chocolate chips and vegetable shortening together in a small bowl at 50% power in 30-second increments, stirring after each, until completely melted and smooth.

Dip each peanut butter-pretzel ball into the melted chocolate and use a fork or spoon to roll it around, ensuring that it is completely coated with chocolate. Let any extra chocolate drip off and place back on the wax paper-lined sheet. Repeat with all of the peanut butter-pretzel balls.

Return the baking sheet to the refrigerator and again chill for at least 30 minutes. Garnish with a drizzle of melted peanut butter (melt the peanut butter for 30 seconds in the microwave and use a fork to drizzle) and crushed pretzels, if desired. Store in an airtight container in the refrigerator.

Mocha Coconut Fudge

When How Sweet It Is posted this recipe, I knew immediately that I would be trying it. I mean really, with her willingness to interrupt our busy plans with this recipe, how could I refuse? :) The flavor combination was an instant win in my book - kind of an extra rich and sweet twist on a yummy frappucino I enjoy occasionally - ahem.

This recipe was super quick, super decadent, and totally yum. I think we may have a new fudge recipe to add to our annual favorites - peanut butter, chocolate, and butter pecan. We may like fudge - the vote is still out - you can send me more recipes to, you know...make sure!

Let me tell you a little secret about this recipe...I made it in the microwave. You can certainly use the double boiler as the recipe recommends but I noticed that she mentioned the microwave as an option and I was sold. You see, I was up to my eyeballs in cookie baking when I threw this recipe in to the mix between shuffling cookies into the oven. So, yes, it was easy. :) You can go here for her original awesome recipe. I'm going to post my microwave version in case you are lazy like me.

Seriously, how pretty is this?! This would make aa really great gift! Oh and I forgot to mention - my mom thought this was wonderful.

Mocha Coconut Fudge

12 oz. semisweet chocolate, chopped (I used 2 c. semi-sweet chocolate chips)
12 oz. white baking chocolate, chopped (I used 2 c. white chocolate chips)
1 can (15oz) sweetened condensed milk (mine was 14 oz which was no problem), divided
1 1/2 Tb. espresso powder or instant coffee (I used the latter - two packets of an instant because that's what I had)
1 tsp. vanilla extract
1 1/2 tsp. coconut extract
1 Tb. coconut oil, divided
1/2 c. flaked coconut, toasted (350 degrees for about 10 minutes but watch it carefully so it doesn't burn!)

Line an 8×8 pan with buttered foil.

Add semisweet chocolate to microwave safe bowl and microwave for 30 seconds. Stir and microwave for 30 more seconds. Add in half of the sweetened condensed milk (I eyeballed it), the coffee powder and 1/2 tablespoon (1 1/2 tsp.) of coconut oil. Return to microwave for 30 seconds. Remove and stir. Continue 30 second increments until fully melted and smooth. Stir in the vanilla. Spread evenly in the bottom of the pan. Mixture will be quitethick. Place in the freezer for 30 minutes (or less if your me and you want to hurry).

Add white chocolate to a micorwave safe bowl and heat for 30 seconds. Add in remaining condensed milk and coconut oil and return to microwave for 30 seconds. Stir. Microwave 30 more seconds if needed until mixture is completely melted. Add coconut extract and thoroughly combine. Remove fudge from freezer and add white chocolate on top, spreading evenly to coat. Top with toasted coconut, then chill in the refrigerator for 60-90 minutes.

When ready to cut, fill a large cup with hot water or run knife under the tap. Dip a sharp knife into the water, then blot on a towel. Use knife to cut fudge into your desired size of squares.

This is SO rich and SO good - I think you could easily cut this into 1 inch squares which would make for 64 pieces of fudge. :) Enjoy and go thank How Sweet It Is for this deliciousness and check out her site! If you like chocolate, coffee, and coconut, you will LOVE this.

Cinnamon-Honey Truffles

Any chocolate loving person is bound to enjoy truffles. They are so deeply rich and chocolatey. I was intrigued by this particular recipe (which I found in some cookbook or other and promptly forgot the name) because the cream is steeped in spices and honey. I loved the idea; however, the spices were very subtle in the end result. If you want more of the cinnamon to shine through, I'd try doubling the amount of cinnamon stick. Or, you can do like I did and sprinkle a little cinnamon into the cocoa powder that you roll the truffles in. Either way, these are delicious drops of chocolate, perfect for a holiday goody tray.

CINNAMON-HONEY TRUFFLES
Print This Recipe

8 ounces dark bittersweet chocolate (at least 60% cacao), very finely chopped
1/2 c. heavy cream
1 Tbsp honey
1/2 tsp vanilla extract
1/2-1 cinnamon stick, 1 1/2-3 inches long (depending on the depth of spice you want)
2 whole cloves
pinch of sea salt
2 1/2 Tbsp unsalted butter, at room temperature
1/4 c. unsweetened dutch-process cocoa powder, sifted

Place the chocolate in a medium heatproof bowl. (It is very important to chop the chocolate very finely to allow it to melt properly.)

In a small saucepan over medium heat, combine the cream, honey, vanilla, cinnamon stick, cloves, and salt. Bring to a boil, reduce the heat to low, and simmer for 5 minutes. Remove from the heat. Pour the cream through a fine-mesh sieve held over the chocolate, discarding the contents of the sieve, and let stand for 2 minutes. Using a rubber spatula, gently stir the chocolate mixture in a circular motion until it has completely melted. Add the butter and stir until incorporated. Cover the bowl with plastic wrap and set aside at room temperature for 30 minutes to set the chocolate. Then refrigerate the chocolate for 30 minutes, or until the chocolate is able to be scooped and rolled into balls.

Line a rimmed baking sheet with waxed paper. Using a small spoon or scoop, scoop out 1-inch balls of chocolate and gently roll them into irregularly shaped truffles. Place them on the prepared baking sheet. Return the truffles to the refrigerator and chill until firm, about 1 hour.

Place the sifted cocoa powder in a shallow bowl. One at a time, roll the truffles in the cocoa, coating evenly. Makes about 30 truffles.

Cook's Note: The truffles will keep up to 2 weeks in the refrigerator.

Mocha Mousse Pie

'Tis the season for lots of sweet treats!  My husband requested a chocolate dessert for Thanksgiving. This naturally gluten-free pie fit the bill. Perhaps you'll find a place for this on your holiday table.

I took this recipe from The Pioneer Woman. The only adjustment I made was to decrease the amount of sugar and still I think it's plenty sweet. This pie is fluffy, yet rich, and incredibly delicious with notes of chocolate and coffee shining through. I love the nut crust on this, but you could just as easily use a crushed cookie crust, regular pre-baked pie crust, or even just serve the filling in cups without any sort of crust. As a disclaimer, this pie does contain raw eggs.

MOCHA MOUSSE PIE
(very slightly adapted from The Pioneer Woman)
Print This Recipe

Crust
1 cup Pecans, Finely Chopped
1/4 cup Brown Sugar
2 ounces, weight Semi Sweet Chocolate Grated
2 Tablespoons Kahlua
Dash Of Salt

Filling
2 sticks Butter, room temperature
1-1 1/4 cup Sugar
2 teaspoons Instant Coffee Granules
1 teaspoon Kahlua
3 ounces, weight Semi-sweet (or Bittersweet) Chocolate
1 teaspoon Vanilla Extract
4 whole Large Eggs

To make the crust, combine chopped pecans (which you can chop in the food processor, if desired), brown sugar, grated chocolate, and salt. Stir with a fork to combine, and then drizzle in Kahlua, stirring until combined. Press mixture into a pie pan, bringing it up the sides a bit. Set aside (do not bake) or refrigerate until needed.

In small microwave safe bowl, melt 3 ounces of unsweetened baking chocolate until smooth and completely melted (about 45 seconds on high). Set aside to cool.

In a large bowl of an electric mixer fitted with the whisk attachment, beat butter, sugar, 2 teaspoons instant coffee, and 1 teaspoon Kahlua until fluffy, about 1 1/2 minutes. When melted chocolate is cooled, drizzle it into the butter/sugar mixture as it beats on medium speed; use a rubber spatula to get it all out. Add 1 teaspoon of vanilla extract. Beat the mixture thoroughly until combined, scraping the sides if necessary.

On medium speed, add the four eggs, one at a time, over a period of 20 minutes; leave about 5 minutes between each egg addition (allowing the mixer to run for 5 minutes with each egg addition). Scrape sides of bowl halfway through this process. The filling will gradually lighten in color and become fluffier. Pour filling into the pie crust.

Smooth out the pie filling and place pie in the refrigerator to chill for at least two hours.

Serve with whipped cream and more grated chocolate, optional.

Baker's Delight: Cherry Chocolate Almond Oatmeal Cookies

Do they have a long enough name? :) These are from the wonderful Bon Appetit Dessert Cookbook. I adapted them based on the ingredients I had but they were delicious! I'm going to go ahead an include the recipe as written in the book because I would totally make them exactly as written.

Cookies are one of my favorite desserts - they are perfect for picnics and pitch-ins, most of them freeze very well, and they are usually fairly easy to put together. They are also one of my favorite things to bake!

Baker’s Delight: Double Chocolate Chip Cookies

We are pleased to welcome back Sarah Pulliam Bailey with this guest post! These would be great for you weekend and summer picnicking!

Chocolate chip cookies provide the ultimate comfort food. If you’re serving chocoholics, consider baking double chocolate chip cookies, which offers a rich, moist, chewy dessert.

The cookies did not turn out terribly even because I was in a hurry and grabbed rounded spoonfuls of dough, which made them puffier. If you prefer more uniform, flattened cookies, you could roll the dough up on parchment paper in a log, refrigerate for two hours, and cut individual cookies. You could also substitute white chocolate chips for peanut butter chips and chopped peanuts. Some of the reviews suggested using 1 tsp. of baking soda and 1 tsp. of baking powder, so consider experimenting. The recipe takes about 30 minutes and makes about 3 dozen cookies.

DOUBLE CHOCOLATE CHIP COOKIES
(Adapted from allrecipes.com)
Print This Recipe

1 cup unsalted butter (2 sticks), softened
1 cup white sugar
3/4 cup brown sugar
2 eggs
1 1/4 cups unsweetened cocoa powder
1 3/4 cups flour
2 teaspoons baking soda
1/4 tsp. of salt
1 tsp. of vanilla
2 cups white chocolate chips or chunks (12 oz. bag)
3/4 cup chopped walnuts (optional)

Preheat oven to 350 degrees F. Grease cookie sheets. In a large bowl (I used my KitchenAid), cream together the butter, brown sugar and white sugar. Add the eggs one at a time, beating each one well. In a separate bowl, whisk together the cocoa, flour, baking soda, and salt. Gradually stir the mixture into the other bowl. Fold in white chocolate chips. Drop rounded spoonfuls onto the cookie sheets. Bake for 8 to 10 minutes (9 minutes was perfect in my oven). Allow cookies to cool on baking sheets for 5 minutes before removing to a wire rack to finish cooling. If you have a smaller kitchen, consider investing in a tiered cooling rack.

Gluten-Free Goodness: Double Chocolate Walnut Brownies

These tasty little morsels are full of chocolatey goodness and they are made with coconut flour. I don't have lots of knowledge of or experience baking with coconut flour, but I know that it soaks of moisture, so a little goes a long way! These also contain walnuts, so they are more healthful and protein packed than your average brownie (we could all use a few more "healthy" brownies in our life, right?!).

I made these for a holiday brunch and topped them with a bit of vanilla custard and strawberries. Though they would be delicious with some whipped cream, icing, powdered sugar, or even just plain.

Off The Shelf: May Magazines

Well, our month has not gone quite as planned so this will be a shorter review and it's later than we intended (my fault completely!). It's wonderful to see the spring and summer recipes featuring seasonal vegetables and fruits! Perhaps inspiration will once again return to kitchens everywhere.

FOOD NETWORK (Alaina)- This wasn't my favorite issue of Food Network but still, they have so many recipes and so much variety. The Jumbo Maple Pecan Scone, Poppy Seed Potato Salad, Stawberry Blondies, and Sage Limeade were a few of the recipes that looked interesting and tasty!

However, my kids are big fans of chocolate milk and it is definitely a treat. So, I decided to make the Salted Chocolate Milk. The homemade chocolate syrup could be used as a sauce for all kinds of desserts. This was rich and delicious! The salt was a wonderful addition that brought out the chocolate goodness. This totally made me feel like a kid again!

SALTED CHOCOLATE MILK
Print This Recipe

1/2 cup sugar
1/3 cup unsweetened cocoa powder
1/2 teaspoon vanilla extract
6 cups cold milk
Kosher salt

Make the chocolate syrup: Combine the sugar and 1/3 cup water in a small saucepan. Bring to a simmer over medium heat, then whisk in the cocoa powder until smooth. Remove from the heat and stir in the vanilla. Let cool completely.

Spoon about 2 1/2 tablespoons of the chocolate syrup into each glass. Add 1 1/2 cups milk and a generous pinch of salt. Stir until the syrup and salt dissolve.

COOKING LIGHT - (Stephanie) I never know each month whether or not I'll find many recipes I'm excited to try within the pages of Cooking Light. This month's issue had several tasty sounding recipes. As I'm trying to learn to enjoy shrimp, I was pleased to find a couple new shrimp recipes: Shrimp Cobb Salad and Roasted Shrimp & Broccoli. There was also a section with assorted muffin recipes--Bacon-Cheddar Corn Muffins, Cherry-Wheat Germ Muffins, Tuscan Lemon Muffins, Pistachio-Chai Muffins--don't those sound interesting and delicious? I also thought the Ancho Chicken Tacos with Cilantro Slaw and Avocado Cream sounded yummy.

I decided to try the Strawberry-Avocado Salsa with Cinnamon Tortilla Chips. I love fresh salsas and the flavor combination in this one intrigued me. I enjoyed this, though unfortunately forgot to buy fresh cilantro and jalapenos, so I used dried instead. If you're looking for a quick, seasonal snack, give this easy recipe a try.

2 Tablespoon minced fresh cilantro
1 teaspoon minced seeded jalapeno
2 teaspoon fresh lime juice
3/8 teaspoon salt

Preheat oven to 350°F.

To prepare chips, brush oil evenly over one side of each tortilla. Combine sugar and cinnamon; sprinkle evenly over oil-coated sides of tortillas. Cut each tortilla into 12 wedges; arrange wedges in a single layer on two baking sheets. Bake at 350°F for 10 minutes until crisp.

Weekend Fare: Coconut Lime Chicken

I've recently been experimenting with using coconut milk in cooking and baking and I'm excited with the results! (I am referring to the coconut milk in the can, such as Thai Kitchen brand.) In honor of my recent experience with this versatile ingredient, I wanted to share with you two recipes: Coconut Lime Chicken and Chocolate Coconut Milk Ice Cream.

The chicken is incredibly tender (although the photo shows a whole piece of chicken make sure to cube it because the result is much more tender!) and the almond butter dipping sauce adds a delicious twist. The ice cream is amazing and so simple! It's unbelievably creamy. I adapted it slightly from a recipe I found online and promptly forgot where I found it. :)

Both of these recipes are gluten-free and dairy-free.

2 Tablespoons wheat-free tamari (or soy sauce)

Almond Lime Dipping Sauce:
6 Tablespoons almond butter
1/4 cup freshly squeezed lime juice
1/4 cup coconut milk
1-2 Tablespoons tamari (or soy sauce)
1 Tablespoon agave nectar or honey
1-2 cloves garlic, crushed

Place the chicken breast pieces into a bowl and cover with the ingredients for the marinade. Stir together to coat evenly. Let chicken marinate for 30 minutes.

Heat a 10-inch skillet or wok over medium-high heat. Add about one Tablespoon of coconut oil. Then add chicken pieces. Saute, stirring frequently, for about 3-5 minutes, or until chicken is cooked through.

Place the dipping sauce ingredients into a bowl and whisk together until mixture is thickened and well combines. Alternatively, sauce can also be warmed on the stove in a small pot over low heat.

To serve, divide dipping sauce into four small bowls and serve alongside chicken. (Brown rice and stir-fried veggies make a great side!) Serves 4.

Baker's Delight: Vanilla Cupcakes

This week, I set out on a mission to find  a vanilla cupcake recipe for my oldest son's birthday. It wasn't as easy as it sounds. Reviews on nearly every vanilla (or white) cake recipe are mixed - some love it, some hate it, some think it's light, some think it's dense...you get the idea. And let's be honest, not everyone is a competent baker, so it's hard to know which reviews to trust!

Finally, I deicided to just jump in and try a recipe. Bobby Flay had one which I adapted to work for me. The texture was lovely and the flavor was quite good. The chocolate frosting he included was delicious as well - a frosting recipe unlike any I have ever made. These definitely got the seal of approval from my family and the birthday boy loved them! They would also make a beautiful Easter or spring dessert.

2 1/2 cups cake flour
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon fine sea salt
1 3/4 cup sugar, divided
10 tablespoons unsalted butter, melted and cooled slightly
1 cup buttermilk, room temperature
3 Tablespoons vegetable oil
1Tablespoon vanilla extract
6 large egg yolks, room temperature
3 large egg whites, room temperature
Creamy Chocolate Frosting, recipe follows
Sprinkles for decorating, if desired

Adjust the oven rack to the middle position and preheat the oven to 350 degrees F. Fill muffin tins with liners .

Whisk the flour, baking powder, baking soda, salt, and 1 1/2 cups sugar together in a large bowl. Whisk together the melted butter, buttermilk, oil, vanilla, and yolks in a medium bowl.

In a clean bowl of a stand mixer fitted with whisk attachment, beat the egg whites at medium-high speed until foamy, about 30 seconds. With the machine running, gradually add remaining 1/4 cup sugar; continue to beat until stiff peaks just form, 30 to 60 seconds Transfer to a separate bowl and set aside. Wash the bowl and dry.

Add the flour mixture to the now-empty mixing bowl fitted with the whisk attachment. With the mixer running at low speed, gradually pour in the butter mixture and mix until almost incorporated (a few streaks of dry flour will remain), about 15 seconds. Stop the mixer and scrape the whisk and sides of the bowl. Return the mixer to medium-low speed and beat until smooth and fully incorporated, 10 to 15 seconds.

Using a rubber spatula, stir 1/3 of the whites into the batter to lighten, and then add the remaining whites and gently fold into the batter until no white streaks remain.

Fill the cupcake molds 3/4 full and bake until just firm, about 18-22 minutes. Let cool and frost with Creamy Chocolate Frosting. Decorate with sprinkles, if desired.

CREAMY CHOCOLATE FROSTING
(Adapted from Bobby Flay at FoodNetwork.com - adaptations noted)

2 1/2 sticks unsalted butter, softened
1 cup confectioners' sugar
3/4 cup Dutch-processed cocoa (I used dark chocolate cocoa powder)
 Pinchof fine sea salt
3/4 cup light corn syrup
1 teaspoon vanilla extract
8 ounces semisweet chocolate, melted and cooled slightly
1 teaspoon espresso powder (I omitted this since I was making them for kids but it would have been a fantastic addition!)

In a food processor (or using a mixer), process the butter, sugar, cocoa, and salt until smooth, about 30 seconds, scraping the sides of the bowl as needed. Add the corn syrup and vanilla and process until just combined, 5 to 10 seconds. Scrape the sides of the bowl, and then add the melted chocolate and espresso and pulse until smooth and creamy, 10 to 15 seconds.

Baker's Delight: Salted Toffee-Chocolate Squares

Honestly, I just didn't know what to make for today. It's been a long couple of weeks filled with illness at our house and my desire to cook and bake has been almost non-existant. And so, I looked at magazines and websites looking for something that would inspire me. I wrote to one of my friends that I was at a loss...and then, I happened to pick up my May 2010 issue of Everyday Food. I turned to the back for the index and instead, I came across this recipe. I had everything on hand and decided to give it a shot.

Oh. My. Goodness. These are amazing. They combine so much yumminess into one cookie that I can hardly stand it! They certainly aren't on the "healthy list" but they are worth the splurge. The coarse salt is just the perfect flavor addition - makes all of the flavors come alive. I had to walk away from the pan of cookies; in fact, I had to go upstairs so I would not eat more. So, without further ado, here is the amazing and easy recipe!

SALTED TOFFEE-CHOCOLATE SQUARES
(Everyday Food, May 2010)
Print This Recipe

13 graham crackers
1 bag (8 ounces) toffee bits
1 1/2 cups coarsely chopped toasted natural almonds
1/2 cup sugar
1 cup (2 sticks) unsalted butter
3/4 cup (4 ounces) bittersweet chocolate, chopped, or chocolate chips (I used mini chocolate chips)
3/4 teaspoon coarse salt

Preheat oven to 350 degrees. Line a rimmed baking sheet with foil. Place graham crackers in a single layer on sheet, edges touching. Sprinkle toffee bits and almonds over graham crackers.

In a small saucepan, bring sugar and butter to a boil over medium-high. Reduce heat and cook at a rapid simmer, swirling pan occasionally, until mixture is syrupy, 2 minutes. Immediately pour over graham crackers. Bake until sugar topping is bubbling, 12 minutes. Remove from oven and immediately sprinkle chocolate and salt over graham crackers. With a sharp knife or pizza cutter, cut into 2-inch squares. Let cool completely on sheet on a wire rack. (Store in an airtight container, up to 1 week.)

Crock Pot Cooking: Dessert

I love my slow cookers (yes, I have two). One of my goals has been to make sure and put dinner in the crock pot at least once a week when I work. The wonderful food fills the house with delicious smells while slowly cooking to perfection. It takes little effort and generally yields great results. Planning ahead also means saving time in the evening and means less temptation to order out thus saving money. We've enjoyed various soups, chicken, and roasts.

Yesterday, I used my crock pots for Sunday dinner. It made for a very nice but easy dinner. I decided on a Chicken Rice Soup for the main dish since I had left over chicken already on hand. It was quite good with a basmati/wild rice mix in it.

When we got home from church, I quickly made pretzel shaped rolls (from my pizza dough recipe) and a salad to accompany it.

But I also decided to try making a dessert...Hot Fudge Cake to be exact. I saw the recipe in Fix It & Forget It Lightly and was intrigued. This deliciously moist pudding cake creastes it's own hot fudge sauce underneath. I served it warm with fresh whipped cream but vanilla ice cream would also be good. I decided that some fresh raspberries or a raspberry puree would have made it just about perfect. It was very easy and took a little under two hours on high until it was done. So, it you want a yummy, fudgey, easy dessert, you should definitely give this rich cake a try. If I were to make it again, I would reduce the amount of sugar - it's quite a lot. But for an occasional dessert treat, I was willing to overlook that. :)

Off the Shelf: February Magazines

Fine Cooking (Stephanie) - I enjoy looking through the pages of Fine Cooking in part because each issue offers a particular dish with recipe alternatives. The February/March issue includes meatloaf variations with aromatics, meats, mix-ins and herbs and spices ideas so you can create your own recipe. This issue also features several recipes using the banana, including Thai-Style Halibut Banana Curry with Peanuts and Banana Split Brownies.

I chose to try the Lemon-Glazed Banana Scones with Crystallized Ginger. I have to admit the flavor combination sounded strange, but nevertheless, intriguing. Also for true confession, I used powdered ginger because I wasn't willing to send $8 on a jar of crystallized ginger for this recipe (conversion: 1/8 tsp of powdered ginger added in with the dry ingredients), so the ginger flavor is most likely less aggressive than the original recipe. Regardless, these are fantastic! I was amazed by the way the banana and lemon complemented each other.

(For any of you gluten-free readers, I successfully made these gf, but substituting my gf all-purpose flour mix of choice and adding 1 tsp of xanthan gum.)

LEMON-GLAZED BANANA SCONES WITH CRYSTALLIZED GINGER
(from Fine Cooking, Feb./Mar. 2011)
Print This Recipe

FOR THE SCONES
9 oz (2 c.) unbleached all-purpose flour; more as needed
1/4 c. granulated sugar
2 1/4 tsp baking powder
1 tsp finely grated lemon zest
3/8 tsp salt
2 3/4 oz (5 1/2 Tbsp) cold, unsalted butter, cut into pieces
1 small ripe (but not mushy) banana, cut into 1/4-inch dice (1/2 c.)
1 Tbsp minced crystallized ginger
3/4 c. + 2 Tbsp heavy cream; more for brushing
coarse white sanding sugar, optional

FOR THE GLAZE
3 oz (3/4 c.) confectioners' sugar
1 1/2 Tbsp fresh lemon juice
1/2 oz (1 Tbsp) unsalted butter, softened
pinch of salt

Position the rack in the top third of the oven and heat the oven to 375°F. Stack two rimmed baking sheets and line the top one with parchment.

In a large bowl, whisk the flour, sugar, baking powder, lemon zest, and salt. With your fingers, rub the butter into the flour mixture until a few pea-size lumps remain. Stir in the banana and the ginger. Add the cream; with a fork, gradually stir until the mixture just comes together.

Turn the dough onto a lightly floured surface and pat gently into a 7-inch circle about 1-inch thick. Using a knife, cut the dough into 8 wedges. Transfer to the baking sheet, spacing the wedges 1-2 inches apart. Brush the tops with heavy cream and sprinkle liberally with sanding sugar (optional).

Bake until the tops are golden, 19-25 minutes, rotating halfway through baking for even browning. Transfer the scones to a wire rack and cool slightly, 3-4 minutes.

In a small bowl, stir the confectioners' sugar, lemon juice, butter, and salt until smooth. Drizzle the warm scones with the glaze. Serve warm or at room temperature.

Saveur (Stephanie) - I perused the 135th issue of Saveur magazine online, the Jan./Feb. issue is the chef's edition. I have to admit that many of the recipes didn't appeal to me as they were ingredients I don't typically use in my kitchen. But there were several different deviled egg recipes I found interesting. I tried the Bacon-and-Cheddar Deviled Eggs; how could they not be delicious?! :)

BACON-AND-CHEDDAR DEVILED EGGS
(from Saveur Magazine, Jan./Feb. 2011)
Print This Recipe

MAKES 12

6 eggs
1/4 cup finely grated sharp cheddar, plus more for garnish
1/4 cup mayonnaise
2 slices bacon, cooked and chopped, plus 2 tsp. rendered bacon fat reserved
Kosher salt and freshly ground black pepper, to taste
Hot sauce, such as Sriracha, to garnish

Put eggs into a 4-qt. pot of water and bring to a boil. Remove pan from heat, cover, and let sit 15 minutes. Drain eggs and crack each shell slightly. Transfer eggs to a bowl of ice water and let cool. Peel eggs. Halve each egg; using a small spoon, transfer yolks to a medium bowl. Using a fork, mash yolks. Add cheddar, mayonnaise, 3/4 of the chopped bacon, and bacon fat; season with salt and pepper. Stir vigorously with spatula until smooth.

Transfer mixture to a plastic bag or a piping bag fitted with a smooth tip and pipe into egg whites. Garnish eggs with the remaining bacon, more cheddar, and hot sauce and serve cold or at room temperature.

Bon Appetit (Alaina) - This issue had some great looking recipes. They have a section an interesting section on honey as well as a variety of chili recipes. The Honey-Roasted Onion Tart, Roasted Beets & Citrus w/Feta, Sesame Cilantro Soup, Black Bean Chili w/Butternut Squash, and Fresh Pinapple Trifles w/Orange-Coconut Cream are just a few of the tempting recipes. However...

...Just look at the cover of this magazine. Yum. And with a boast of them being the best brownies ever and that you would want to eat the entire pan, well, I simply had to try them. Not that I needed them, mind you - it was all in the interest of kitchen research, of course. :) The verdict: I DID want to eat the whole pan but I restrained myself. Despite my adding way too much flour, they turned out simply delicious. I think the combination of the browned butter, walnuts, and rich chocolatey goodness made them irresistable. [On a side note, I used dark chocolate cocoa powder.] These would be an excellent Valentine's Dessert if you are cooking dinner for two. You could use a cookie cutter to cut them into hearts and serve them with ice cream or fresh whipped cream or all by themselves. Seriously good, folks. Make them.

COCOA BROWNIES w/BROWNED BUTTER & WALNUTS
(aka delicious and worth every calorie)
Bon Appetit, February 2011
Print This Recipe

10 tablespoons (1 1/4 sticks) unsalted butter, cut into 1-inch pieces
1 1/4 cups sugar
3/4 cup natural unsweetened cocoa powder (spooned into cup to measure, then leveled)
1 teaspoon vanilla extract
2 large eggs, chilled
1/3 cup plus 1 tablespoon unbleached all purpose flour
1 cup walnut pieces

Position rack in bottom third of oven; preheat to 325°F. Line 8x8x2-inch metal baking pan with foil, pressing foil firmly against pan sides and leaving 2-inch overhang. Coat foil with nonstick spray. Melt butter in medium saucepan over medium heat. Continue cooking until butter stops foaming and browned bits form at bottom of pan, stirring often, about 5 minutes. Remove from heat; immediately add sugar, cocoa, 2 teaspoons water, vanilla, and 1/4 teaspoon (generous) salt. Stir to blend. Let cool 5 minutes (mixture will still be hot). Add eggs to hot mixture 1 at a time, beating vigorously to blend after each addition. When mixture looks thick and shiny, add flour and stir until blended. Beat vigorously 60 strokes. Stir in nuts. Transfer batter to prepared pan.

Bake brownies until toothpick inserted into center comes out almost clean (with a few moist crumbs attached), about 25 minutes. Cool in pan on rack. Using foil overhang, lift brownies from pan. Cut into 4 strips. Cut each strip crosswise into 4 brownies. DO AHEAD Can be made 2 days ahead. Store airtight at room temperature.
