Vegan Chocolate Chip Cookies

I think I found this recipe in The Happy Herbivore cookbook. But as I didn't notate that information, I'm not for sure. :) I certainly cannot take credit for these. While these aren't your typical melt-in-your-mouth chocolate chip cookies, they are good and a great healthy treat, with no added fat and not too much sugar. Plus, the are gluten-free! They have become our go-to dessert when we need a little sweet fix. Within 30 minutes you can enjoy warm cookies from the oven!

Vegan Chocolate Chip Cookies

VEGAN CHOCOLATE CHIP COOKIES
Print This Recipe


1/3 c. unsweetened applesauce
1/2 c. coconut sugar or brown sugar
1 tsp vanilla
1/4 c. non-dairy milk
1 c. gluten-free all purpose flour mix
1 tsp baking powder
1/4 tsp salt
1 Tbsp cornstarch or arrowroot powder
1/4 tsp cinnamon
1/2 c. chocolate chips

Preheat oven to 350°F. Grease cookie sheet or line with parchment paper.

In a bowl combine applesauce, sugar, vanilla, and milk. In a small bowl, whisk together flour, baking powder, salt, cornstarch, and cinnamon. Pour dry ingredients into wet in three batches, stirring to combine. Fold in chocolate chips.

Drop by spoonfuls on cookie sheet. Bake for 11-13 minutes.

Makes 15 cookies.

Flourless Chocolate Cake

For all you chocolate lovers, I have the perfect dark chocolate cake for your Valentine's Day celebration! I dusted mine with some powdered sugar, but this would be lovely with a chocolate glaze, a thin layer of icing, whipped cream, or a puree of berries. It's delicious, simple to make, and naturally gluten-free! Plus, Jeremy gave it two thumbs up. So, whether you're dining out or in, make sure you end your night with something sweet.

As a conversational aside, for my wedding 3 1/2 years ago someone gave me a His and Hers heart shaped baking pan. I decided this was the perfect opportunity to try it out. The batter was a little too much for these, but I still thought the heart shape was fun for the occasion. (I definitely would not buy a pan with such infrequent uses, but I guess it's fun to use every once in awhile, since I already own it! :) )



FLOURLESS CHOCOLATE CAKE
(ever so slightly adapted from epicurious.com)

4 oz quality, bittersweet chocolate (I used a 72% cacao)
1 stick unsalted butter
3/4 c. sugar
3 large eggs
1/2 c. unsweetened cocoa powder
1/2 tsp vanilla extract

Preheat oven to 375°F. Butter an 8-inch round baking pan. Line bottom with wax paper and butter paper.

Chop chocolate into small pieces. Cut butter into 8 pieces. In the top of a double boiler or a bowl set over a saucepan of barely simmering water melt chocolate with butter, stirring, until smooth. Remove the bowl from heat and whisk sugar into chocolate mixture. Add eggs and vanilla and whisk well. Sift 1/2 cup cocoa powder over chocolate mixture and whisk until just combined.

Pour batter into pan and bake for 25 minutes, or until top has formed a thin crust. Cool cake in pan on a rack for 5 minutes and invert onto a serving plate. Garnish as desired.

(When completely cooled, cake will keep in an airtight container up to 1 week.)

Cherry Vanilla Scones

Valentine's Day is quickly approaching and one taste of these and I knew they would make a perfect addition to a romantic breakfast in bed. We loved them! I made them with a couple of other dishes for Sunday brunch and the meal was proclaimed a big success by all four of my critics. I'm planning to post two additional recipes to add to your Valentine's breakfast. Hope you enjoy!

These are best the first day but you can definitely enjoy them the next morning.





CHERRY VANILLA SCONES

3 c. flour
1/2 c. sugar
2  1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 c. cold butter
1 c. vanilla yogurt or plain yogurt with 1 tsp. vanilla extract and 1 Tb. of agave nectar
1/4 c. milk
1 c. tart dried cherries, roughly chopped
2/3 c. vanilla chips or white chocolate chips

milk for brushing the top
sugar for sprinkling

Preheat the oven to 400 degrees.

Combine the flour, sugar, baking powder, and soda in a large bowl. Cut in butter until the mixture resembles coarse crumbs.

Combine yogurt and milk. Stir into the flour mixture until moistened. Gently knead in the cherries and vanilla chips.

Pat the dough about 1/2-3/4 inches thick. Cut into desired shaped and place on a baking sheet. Brush tops with additional milk and sprinkle with a little sugar.

Bake for 20-25 minutes or until golden brown. Best served warm!

Grandma's Molasses Crinkles

This is perhaps one of my favorite cookies ever. It brings back many memories of family gatherings and shared meals. While I mostly remember my aunt and my mom making them, the recipe originated with my grandma and so I always think of her. I searched through her recipe box and found it written in her hand with a tiny note that this is a good recipe. Love that.

These are the perfect texture, the perfect combination of spices, perfectly sweet but not too sweet, and perfectly formed with "crinkles" on top. They are delicious warm or cooled. Stephanie even had these as favors at her wedding. Yes, I think it's fair to say these are a family tradition.

Molasses Crinkles would be a great addition to your Superbowl Party (along with many of other appetizer and snack recipes!) but they would also be good just about any other day. Perfection.



GRANDMA'S MOLASSES CRINKLESPrint This Recipe

3/4 c. shortening (trust me on this one)
1/4 c. molasses
1 c. sugar
1 egg
2 1/4 c. flour
2 tsp. baking soda
1/2 tsp. salt
1 tsp. ginger
1 tsp. cinnamon
1/2 tsp. cloves

Pre-heat oven to 375 degrees.

Cream shortening, molasses, sugar, and egg together until fully combined and creamy. Add flour, soda, salt, ginger, cinnamon, and cloves. Mix until fully combined.

Scoop dough and roll into 1 inch balls and roll in sugar. Place on an ungreased cookie sheet and bake for 10 minutes or until crinkled on top and lightly golden. Makes about 3 dozen.

Flour-less Peanut Butter Chocolate Chip Cookies

I know the flurry of holiday baking is behind us and we're looking to tighten our belts and say "no" to sweets. But sometimes you just need a sweet fix. Or perhaps you need a  little something to share with company or to bring to a gathering. How about five-ingredient flour-less cookies?! Not only are these quick to mix up, but they are awfully tasty as well. We are fans of peanut butter and chocolate around here, so one night when we "needed" an after dinner sweet treat, I made these. This recipe is definitely a keeper.

I found this recipe in the October issue of Every Day With Rachael Ray magazine. In keeping with how I approach dessert recipes, I cut back on the sugar by 1/3 of a cup. I thought the cookies were perfectly sweet that way, allowing the peanut butter and chocolate flavors to shine through. But, feel free to up the sugar if you like your sweets super sweet. Additionally, I've made these egg-free by making a flax gel to replace the egg (1 Tbsp ground flax seed + 3 Tbsp hot water whisked together and set aside for a few minutes to gel). The texture was slightly different with the flax gel in place of the egg, but the flavor was just as good.



FLOUR-LESS PEANUT BUTTER CHOCOLATE CHIP COOKIES

1 cup peanut butter
2/3 cup brown sugar
1 egg
1 teaspoon baking soda
1/2 cup chocolate chips

Beat first 4 ingredients with a mixer. Stir in chocolate chips. Drop rounded Tablesoons of dough 2 inches apart on a parchment-lined cookie sheet. Bake at 350°F for 10 minutes. Let cool on pan.

Makes 16 cookies.

Gingerbread Cookies

We enjoyed having friends over to decorate giant gingerbread people - candy, icing, sprinkles, the works! It was much less work than houses for our age group.

So I was in search of the perfect gingerbread cookie recipe and I think this one is pretty close! The recipe I adapted it from received great reviews but after reading them and reading the recipe, I adjusted the spices. So, this is my version of gingerbread.

I rolled these out but I'm also thinking you could form them into balls, dip the bottom of a cup in sugar and flatten the cookies before baking. If you do the latter, I think the refrigeration time would matter less.

These make your house smell wonderful and they are truly delicious - not too sweet. It was so fun making memories with my kids and their friends as they decorated their people. Their cookies were be-decked with candy - too cute! My examples are not nearly as cute. :)


GINGERBREAD COOKIES

3 c. flour
1 tsp. baking soda
1 1/2 tsp. ground cinnamon
1 1/2 tsp. ground ginger
1 tsp. ground allspice
3/4 tsp. ground cloves
1/2 tsp/ salt
1/4 tsp. freshly milled black pepper
2 stick unsalted butter, softened
1/4 c. vegetable shortening, at room temperature
1/2 c. packed light brown sugar
2/3 c. unsulfured molasses
1 large egg


Position the racks in the top and bottom thirds of the oven and preheat to 350 degrees F.

Combine the flour, baking soda, cinnamon, ginger, allspice, cloves, salt and pepper into a medium bowl.  Set aside.

In a large mixer, beat the butter and vegetable shortening until well-combined, about 1 minute.  Add the brown sugar and beat until the mixture is light in texture and color, about 2 minutes. Beat in the molasses and egg.  Gradually mix in the flour mixture to make a stiff dough.  Divide the dough into two thick disks and wrap each disk in plastic wrap.  Refrigerate until chilled - at least 3 hours.  (The dough can be prepared up to 2 days ahead.)

To roll out the cookies, work with one disk at a time, keeping the other disk refrigerated.  Remove the dough from the refrigerator and let stand at room temperature until just warm enough to roll out without cracking, about 10 minutes. (If the dough has been chilled for longer than 3 hours, it may need a few more minutes.) Place the dough on a lightly floured work surface and sprinkle the top of the dough with flour.  Roll out the dough 1/8 inch thick, being sure that the dough isn't sticking to the work surface (run a long meal spatula or knife under the dough occasionally just to be sure, and dust the surface with more flour, if needed).  For softer cookies, roll out slightly thicker (about 1/4 inch or a little less).  Using cookie cutters (or these templates - I printed the large boy and girl on cardstock and cut around them), cut out the cookies and transfer to nonstick cookie sheets, placing the cookies 1 inch apart.  Gently knead the scraps together and form into another disk.  Wrap and chill for 5 minutes before rolling if it is sticking and then cut out more cookies.

Bake until the edges of the cookies are set and crisp, 10 to 12 minutes.  Cool on the sheets for 2 minutes, then transfer to wire cake racks to cool completely.  Decorate as desired.  (The cookies can be prepared up to 1 week ahead, stored in airtight containers at room temperature.) Makes about 3 dozen depending on size of the cookies.

Cocoa Thumbprints

Welcome to our week-long Christmas treats extravaganza! Our focus will be on chocolate, but we might sneak something else in as well. We hope you find plenty of inspiration for your holiday baking!

I enjoy a good jam-filled thumbprint cookie. Last year I made lovely little butter thumbprint cookies. This year I was imagining a chocolate cookie base with a berry jam center. And what do I find in the December issue of Food Network Magazine? That's right, Cocoa Thumbprints!

I tinkered with the recipe a bit to make them gluten-free. I cut-back on the sugar by a couple of Tablespoonfuls. And I used a slightly sweet, four-fruit jam as the center. Oh my, these are tasty!

As usual, if you are not gluten-free, feel free to substitute all-purpose flour and omit the xanthan gum.



COCOA THUMBPRINTS
(slightly adapted from Food Network Magazine, Dec. 2011)

1 1/2 c. gluten-free all-purpose flour
scant 3/4 c. sugar
1/2 c. unsweetened Dutch-process cocoa powder
1 tsp baking powder
1/2 tsp salt
1/2 tsp xanthan gum
6 Tbsp unsalted butter, melted
2 eggs, lightly beaten
1/4 c. confectioner's sugar (for rolling)
1/4 c. granulated sugar (for rolling)
favorite jam (for filling)

In a medium bowl, whisk together the flour, scant 3/4 cup sugar, cocoa powder, baking powder, salt, and xanthan gum. Add the melted butter and eggs and stir until combined. Cover and refrigerate the dough until firm, about 30 minutes.

Preheat the oven to 325°F. Line 2 baking sheets with parchment paper.

Place the confectioner's sugar and the granulated sugar in two separate bowls. Roll scant Tablespoonfuls of dough into balls. Roll each in granulated sugar and then in confectioner's sugar. Place 1-inch apart on baking sheets.

Make a deep indentation with thumb in each cookie. Place 1/2 teaspoon of jam in the indentation. Bake 10 to 12 minutes, or until the cookies are puffed and slightly cracked. Let cool 3 minutes on the baking sheet. Then transfer to a wire rack until completely cooled.

Gluten-Free Pie Crust

If you are new to the gluten-free lifestyle, the holidays may seem rather daunting. However, this time of year can be joyful in the kitchen for you as well. You don't have to pass up on all desserts. If you have a favorite all-purpose gluten-free flour blend, you can very often substitute one-for-one by replacing all-purpose wheat flour, with your gluten-free mix. For some recipes you will need to add a little xanthan gum for texture, but that's about it.

And, if you love pie, I'm here to share my favorite pie crust recipe. I've posted this before, but thought now would be a great time to remind you how possible it is to live gluten-free. This recipe is quite simple and freezes well, if you want make several batches to have on hand. I've served this to gluten eaters and they don't notice a difference. So, go ahead, eat a piece of pie this holiday season!



TRADITIONAL PIE CRUST
(from The Gluten-Free Good Health Cookbook)

1 c. + 2 Tbsp Brown Rice Flour Mix*
2 Tbsp sweet rice flour
1 Tbsp sugar
1/2 tsp xanthan gum
1/4 tsp salt
6 Tbsp cold unsalted butter, cut into 6 pieces (don't use margarine)
1 large egg
2 tsp orange juice or lemon juice

In the bowl of an electric mixer, mix together the flours, sugar, xanthan gum and salt. Add the butter and mix until the mixture is crumbly and resembles a coarse meal.

Add the egg and orange juice. Mix on low speed until the dough holds together; it should not be sticky. Form the dough into a ball using your hands and place on a sheet of wax paper. Top with a second sheet of wax paper and flatten the dough into a 1-inch thickness. Roll out the dough (if it seems tacky, refrigerate for 15 minutes). Remove top wax paper and invert into 9-inch pie pan. Remove second sheet of wax paper and crimp the edges. Fill with desired filling.

Makes 1 9-inch pie crust.

*Brown Rice Flour Mix: 2 c. Brown rice flour; 2/3 c. Potato starch (not potato flour!); 1/3 c. Tapioca flour.

Baker's Delight: Peach Pie

Summer fruit pie has been on my mind. So, last week I made three batches of pie crust and froze two. The other one I made into a peach-blueberry pie. Each bite was like a taste of summer!

Since it's just Jeremy and I here, a 9-inch pie is a little too much for us. I found a lovely 6-inch Pyrex pie plate at the thrift store and it's become my go-to pie baking pan. One 9-inch pie crust becomes a top and bottom crust for this little pan. When I made this pie, I cut the recipe in half, but aired on the side of a heavy-half. If you want to make the recipe into a peach-blueberry pie, substitute a cup or two of blueberries for some of the peaches.



PEACH (-Blueberry) PIE
(slightly adapted from Pie Pie Pie)

Basic pie dough for a 9-inch, 2-crust pie (I made a gluten-free pie crust)

1/2 cup sugar
1/3 cup all-purpose flour (for gf, use a gf all-purpose flour)
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon salt
3 Tablespoons fresh lemon juice
3 pounds peaches, halved, pitted, and thinly sliced, to make about 7 cups fruit
2 Tablespoons unsalted butter, cut into small pieces

Preheat the oven to 425°F. Roll out half of the dough for the bottom crust and fit it into a 9-inch pie pan. Roll out the remaining dough for the top crust and set it aside on a sheet of waxed paper.

In a large bowl, stir together the sugar, flour, cinnamon, nutmeg, and salt with whisk until evenly mixed. Add the lemon juice and peaches and toss until the fruit is completely coated with the sugar mixture. Pile the peaches in the dough-lined pan, mounding them slightly in the center. Scatter the butter over the fruit.

Put on the top crust, then trim and flute the edges. With the point of a sharp knife, cut several vents in the top for steam to escape.

Bake for 25 minutes, then reduce the heat to 350°F. Bake for another 25-30 minutes, or until the crust is golden brown and you see juices bubbling through the vents.

Serve warm or at room temperature.

Baker's Delight: Lemon Pound Cake w/Lemon Cream

I adapted a recipe for plain pound cake into a lemon pound cake. And I came up with a lemon cream to add the lemon flavor. Any kind of berry would be delicious topping this cake - I chose lightly sweetened strawberries. It was the perfect dessert for a summer dinner party!



LEMON POUND CAKE
Print This Recipe

1 3/4 c. flour
1/2 tsp. salt
1 c. unsalted butter, room temperature
1 1/2 c. sugar
3 lg. eggs
1 tsp. vanilla extract
1 tsp. lemon extract
zest of 2 lemons
1/4 c. milk

Preheat oven to 350 degrees. Butter and flour a 9x5x3 loaf pan. Combine flour and salt in a bowl and set aside.

Using a mixer, beat butter in large bowl until fluffy. Gradually add sugar, beating until well vlended. Beat in eggs 1 at a time. Beat in extracts and zest. Beat in half of the flour mixture, then milk, then remaining flour. Spread batter evenly in prepared pan.

Bake cake until golden and tester comes out clean - about 1 hour and 15 minutes. Cool cake in pan 10 minutes. Cute around pan sides to loosen cake. Turn cake out onto rack and cool completely.

LEMON CREAM

4 oz. cream cheese
1/2 c. sugar
1 c. heavy whipping cream
Juice of 1 lemon
Zest of 1 lemon

Whip the cream cheese and sugar together until light and fluffy. Add zest and juice and mix until fully combined. Add whipping cream and whip until stiff peaks form.

Baker's Delight: Strawberry Pie

I love fresh strawberry pie. It makes me think of my mom, as I associate it with her late April birthday. I used local strawberries to make this lightly sweetened pie. I wasn't in the mood to work on a pie crust, so I just made a coconut crust (shredded coconut and melted butter), but really, I'd recommend going to the trouble of a regular pie crust. Strawberry pie doesn't keep fabulously well, so you'll want to eat it within a couple days.

I have this lovely cookbook devoted solely to pies! I found this recipe in there--fresh berries are mixed in with mashed and lightly cooked berries. It's super easy, delicious, and isn't the deep red color of this gorgeous?



FRESH STRAWBERRY PIE

Prepare  your basic pie crust recipe for a 9-inch pie shell

1 3/4 to 2 pounds fresh strawberries, 6-8 cups, depending on berry size
1/4 cup cornstarch
3/4 cup sugar
pinch of salt
2 Tablespoons fresh lemon juice
Whipped Cream

Preheat the oven to 425°F. Roll out the dough and fit it into a 9-inch pie pan. Trim and flute the edges, then bake the pie shell fully. Cool completely before filling.

Dump the berries into a colander and rinse them. Drain well, shaking to remove excess water, then remove the stems. Pick out about 1 cup of whole berries and reserve for garnish. Cut half of the remaining berries into thick slices (or leave them whole if they are small) and set aside.

Put the remaining whole berries in a medium saucepan and crush them with a potato masher. Add the cornstarch, sugar, and salt and stir until the cornstarch has dissolved completely. Cook over medium heat, stirring constantly, until the mixture boils and thickens. Reduce the heat and cook gently for about 1 minute. Remove from the heat and stir in the lemon juice, then cool for 20-30 minutes, stirring 2 or 3 times, until just faintly warm.

Stir in the sliced strawberries. Pour the mixture into the pie shell, and refrigerate for 2-3 hours, until the filling is softly set.

Before serving, prepare the whipped cream and spread it over the pie. Garnish with the whole berries.

Cook's Note: If you want to make this gluten-free, just make a gluten-free pie crust. The pie filling is naturally gluten-free.

Additional Note: The photo above is far from my most stellar effort, but alas it was the best I could get. The coconut crust didn't cut well, so creating a pie-shaped piece wasn't all that easy. But, it was tasty!

Baker's Delight: Cherry Chocolate Almond Oatmeal Cookies

Do they have a long enough name? :) These are from the wonderful Bon Appetit Dessert Cookbook. I adapted them based on the ingredients I had but they were delicious! I'm going to go ahead an include the recipe as written in the book because I would totally make them exactly as written.

Cookies are one of my favorite desserts - they are perfect for picnics and pitch-ins, most of them freeze very well, and they are usually fairly easy to put together. They are also one of my favorite things to bake!



CHERRY-CHOCOLATE CHIP OATMEAL COOKIES
Bon Appetit Dessert Cookbook
Print This Recipe

1 c. all purpose flour
1/2 tsp. baking soda
1/4 tsp. salt
1/2 c. plus 2 Tb. unsalted butter, room temperature
1/2 c. sugar
1/2 c. (packed) dark brown sugar
1 large egg
1 tsp. vanilla extract
1/2 tsp. almond extract
1 c. old-fashioned oats
1 1/2 c. semisweet chocolate chips
1 c. dried tart cherries
1/2 c. slivered almonds, toasted


Position racks in center and top third of oven and preheat to 325°F. Line 2 large baking sheets with parchment paper. Sift flour, baking soda and salt into medium bowl. Using electric mixer, beat butter, sugar and brown sugar in large bowl until well blended. Mix in egg and both extracts. Beat in flour mixture. Mix in oats, then chocolate chips, cherries and almonds.

Drop dough by rounded tablespoonfuls onto baking sheets, spacing 2 inches apart. Bake cookies 12 minutes. Switch and rotate baking sheets. Bake cookies until golden, about 6 minutes longer. Cool cookies on baking sheets (cookies will firm as they cool). (Can be prepared 1 week ahead. Store airtight at room temperature.)

Baker's Delight: Lime Shortbread

This weekend I needed to make a quick dessert and so I turned to one of my newest cookbooks, Bon Appetit Dessert. Heather actually gave me this amazing cookbook for my birthday and I just couldn't wait to start trying the delicious recipes! This recipe was for Lemon Shortbread Squares but I switched it up to to make them lime. We LOVED them! I doubled the recipe and put them in a 12x18 bar pan which made them thinner than the original recipe but it was perfect for us. These are just so good and so incredibly easy!



LIME SHORTBREAD
(Adapted from Bon Appetit Desserts)
Print This Recipe

1/2 c. sugar
1 Tb. finely grated lime peel
3/4 c. unsalted butter, room temperature
1 Tb. fresh lime juice
2 Tb. cornstarch
1/2 tsp. salt
1 1/2 c. flour

Preheat oven to 300 degrees. Spray pan with nonstick spray.

Using fingertips, rub sugar and lime peel together in large bowl to release essential oils in peel. Add butter. Using electric mixer, beat until mixture in light and fluffy. Beat in lime juice, then cornstarch, and salt, Add flour and beat just until blended. Using fingers, press dough firmly and evenly over bottom of prepared pan. Pierce dough all over with fork.

Bake shortbread until cooked through and just golden brown, about 50 minutes. Cool in pan on rack 10 minutes. Cut and enjoy. Store in an airtight container at room temperature.

Baker’s Delight: Double Chocolate Chip Cookies

We are pleased to welcome back Sarah Pulliam Bailey with this guest post! These would be great for you weekend and summer picnicking!

Chocolate chip cookies provide the ultimate comfort food. If you’re serving chocoholics, consider baking double chocolate chip cookies, which offers a rich, moist, chewy dessert.

The cookies did not turn out terribly even because I was in a hurry and grabbed rounded spoonfuls of dough, which made them puffier. If you prefer more uniform, flattened cookies, you could roll the dough up on parchment paper in a log, refrigerate for two hours, and cut individual cookies. You could also substitute white chocolate chips for peanut butter chips and chopped peanuts. Some of the reviews suggested using 1 tsp. of baking soda and 1 tsp. of baking powder, so consider experimenting. The recipe takes about 30 minutes and makes about 3 dozen cookies.

 

DOUBLE CHOCOLATE CHIP COOKIES

1 cup unsalted butter (2 sticks), softened
1 cup white sugar
3/4 cup brown sugar
2 eggs
1 1/4 cups unsweetened cocoa powder
1 3/4 cups flour
2 teaspoons baking soda
1/4 tsp. of salt
1 tsp. of vanilla
2 cups white chocolate chips or chunks (12 oz. bag)
3/4 cup chopped walnuts (optional)

Preheat oven to 350 degrees F. Grease cookie sheets. In a large bowl (I used my KitchenAid), cream together the butter, brown sugar and white sugar. Add the eggs one at a time, beating each one well. In a separate bowl, whisk together the cocoa, flour, baking soda, and salt. Gradually stir the mixture into the other bowl. Fold in white chocolate chips. Drop rounded spoonfuls onto the cookie sheets. Bake for 8 to 10 minutes (9 minutes was perfect in my oven). Allow cookies to cool on baking sheets for 5 minutes before removing to a wire rack to finish cooling. If you have a smaller kitchen, consider investing in a tiered cooling rack.

Baker's Delight: Banana Cupcakes

I first made this recipe a few years ago and really enjoyed it! Recently, I was asked to provide banana cupcakes for an open house and I remembered these. And so, I returned to the recipe and adapted it - these were the result. The honey cream cheese frosting is fabulous - not too sweet but oh so wonderful. These also make wonderful mini cupcakes - a batch makes 24 regular cupcakes and a lot of minis.  



BANANA CUPCAKES

3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups sugar
1 cup canola oil
3 large eggs
1 tablespoon vanilla extract
4 ripe bananas, peeled and coarsely mashed

Frosting:


8 ounces cream cheese
1 stick unsalted butter, softened
1/4 cup honey
1/2 cup chopped walnuts, toasted (optional)


Line 24 muffin cups with paper liners. Preheat the oven to 325 degrees F.

Whisk the flour, baking soda, salt, baking powder, cinnamon, and nutmeg in a medium bowl to blend. Beat the sugar, oil, eggs, and vanilla in a large bowl to blend. Stir in the banana. Add the dry ingredients and stir just until blended.

Divide the batter among the prepared muffin cups. Bake on the middle rack until the tops are golden brown and a tester inserted into the center comes out with no crumbs attached, about 25 minutes. Transfer cakes to a rack and cool slightly. Cool completely before frosting.

To frost the cupcakes: Using an electric mixer, beat the cream cheese and butter in a large bowl until light and fluffy. Beat in   the honey. Spread the frosting over the muffins. Sprinkle with the walnuts if desired.

Baker's Delight: Baked Breakfast Cheesecake

In about 30 minutes you can have a crust-less, breakfast cheesecake on the table. And while cheesecake definitely isn't for every breakfast, this lightly-sweet version makes a simple, special breakfast treat. I served this topped with fresh strawberries and bananas, with a spinach frittata to round out the meal.

The recipe calls for using a springform pan. If you don't have one, just butter a pie dish (this will be more difficult to serve, but won't effect the flavor at all). I actually halved this recipe and used a 7-inch pie pan and it worked great.



BAKED BREAKFAST CHEESECAKE

21 ounces of cream cheese or ricotta cheese
5 Tablespoons unsalted butter, melted and cooled slightly
3 Tablespoons quick oats or flour (I used gluten-free quick oats)
pinch of sea salt
1/2 cup sugar
2 eggs, lightly beaten
Finely grated zest of 2 oranges, plus 1 Tablespoon juice (I used 1 Tblsp oj concentrate instead)
3 Tablespoons raisins (optional)

Serve with fresh fruit or fruit compote

Preheat the oven to 325°F. Generously butter a 9-inch springform pan.

Beat the cheese with a wooden spoon until smooth, then add the melted butter, oatmeal, salt, sugar, eggs, orange zest and juice, and mix well (you can mix all in a food processor if preferred or use a hand mixer). Fold in raisins, if using.

Spoon the mixture into the prepared pan and bake for about 25 minutes, until just set, with a slight wobble in the center.

Serve hot, warm, or at room temperature with fruit. Serves 10

Baker's Delight: Lemon Raspberry Cupcakes



As promised, here is the lemon cupcake recipe! We really enjoyed these. I still want to tweak the frosting a little bit but it's really good. Don't skip the lemon curd, it's excellent and it will make more than you need which is a happy bonus.  You can print all of these recipes here.



LEMON CURD
(Adapted from Ina Garten)


Zest of 3 lemons
1 1/2 c. sugar
1 stick unsalted butter, room temperature
4 eggs
1/2 c. fresh lemon juice
1/8 tsp. salt

Combine lemon zest, sugar, butter, eggs, lemon juice, and salt in a saucepan.


Cook over low heat until thickened (about 10 minutes), stirring constantly. The lemon curd will thicken just below simmer. Remove from the heat and cool or refrigerate – place plastic wrap on surface of curd while it cools.


LEMON CUPCAKES



2 1/2 c. cake flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. salt
2 1/2 sticks unsalted butter, softened
2 c. sugar
5  eggs
1 1/2 tsp. vanilla extract
1 tsp. lemon extract
2/3 c. buttermilk
Zest of 2 lemons

Preheat oven to 350 degrees F. Line 2 muffin tins with paper liners.


Into a medium bowl whisk together flour, baking powder, baking soda, and salt; set aside.

In a stand mixer, cream butter and sugar together until light and fluffy, about 4 minutes. Add eggs 1 at a time until just combined. Add vanilla and lemon extract and zest. Add buttermilk and dry ingredients, being careful not to over mix.

Fill cupcake liners 2/3 full with batter. Bake for 15 to 18 minutes or until golden brown and toothpick inserted in the center comes out clean. Remove from oven and let cool on wire racks before filling and frosting.


RASPBERRY CREAM CHEESE FROSTING:





4 oz. cream cheese, softened
1 stick unsalted butter, softened
2 teaspoons vanilla extract
6-8 cups confectioners' sugar
1/2 cup raspberry preserves


Using a hand-held mixer beat cream cheese and butter together until light and smooth. Add vanilla extract and slowly add the confectioners' sugar 1 cup at a time until thoroughly incorporated and desired thickness is reached.




TO ASSEMBLE:
Remove a small amount of cake from the center of the cooled cupcake and spoon in the chilled lemon curd. Use a pastry bag or Ziploc bag to frost the cupcakes. Store finished cupcakes in the refrigerator.

Baker's Delight: Vanilla Cupcakes

This week, I set out on a mission to find  a vanilla cupcake recipe for my oldest son's birthday. It wasn't as easy as it sounds. Reviews on nearly every vanilla (or white) cake recipe are mixed - some love it, some hate it, some think it's light, some think it's dense...you get the idea. And let's be honest, not everyone is a competent baker, so it's hard to know which reviews to trust!

Finally, I deicided to just jump in and try a recipe. Bobby Flay had one which I adapted to work for me. The texture was lovely and the flavor was quite good. The chocolate frosting he included was delicious as well - a frosting recipe unlike any I have ever made. These definitely got the seal of approval from my family and the birthday boy loved them! They would also make a beautiful Easter or spring dessert.



VANILLA CUPCAKES
(adapted from Bobby Flay's Mini Vanilla Bean Cupcakes)

2 1/2 cups cake flour
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon fine sea salt
1 3/4 cup sugar, divided
10 tablespoons unsalted butter, melted and cooled slightly
1 cup buttermilk, room temperature
3 Tablespoons vegetable oil
1Tablespoon vanilla extract
6 large egg yolks, room temperature
3 large egg whites, room temperature
Creamy Chocolate Frosting, recipe follows
Sprinkles for decorating, if desired


Adjust the oven rack to the middle position and preheat the oven to 350 degrees F. Fill muffin tins with liners .

Whisk the flour, baking powder, baking soda, salt, and 1 1/2 cups sugar together in a large bowl. Whisk together the melted butter, buttermilk, oil, vanilla, and yolks in a medium bowl.

In a clean bowl of a stand mixer fitted with whisk attachment, beat the egg whites at medium-high speed until foamy, about 30 seconds. With the machine running, gradually add remaining 1/4 cup sugar; continue to beat until stiff peaks just form, 30 to 60 seconds Transfer to a separate bowl and set aside. Wash the bowl and dry.

Add the flour mixture to the now-empty mixing bowl fitted with the whisk attachment. With the mixer running at low speed, gradually pour in the butter mixture and mix until almost incorporated (a few streaks of dry flour will remain), about 15 seconds. Stop the mixer and scrape the whisk and sides of the bowl. Return the mixer to medium-low speed and beat until smooth and fully incorporated, 10 to 15 seconds.

Using a rubber spatula, stir 1/3 of the whites into the batter to lighten, and then add the remaining whites and gently fold into the batter until no white streaks remain.

Fill the cupcake molds 3/4 full and bake until just firm, about 18-22 minutes. Let cool and frost with Creamy Chocolate Frosting. Decorate with sprinkles, if desired.




CREAMY CHOCOLATE FROSTING
(Adapted from Bobby Flay at FoodNetwork.com - adaptations noted)

2 1/2 sticks unsalted butter, softened
1 cup confectioners' sugar
3/4 cup Dutch-processed cocoa (I used dark chocolate cocoa powder)
 Pinchof fine sea salt
3/4 cup light corn syrup
1 teaspoon vanilla extract
8 ounces semisweet chocolate, melted and cooled slightly
1 teaspoon espresso powder (I omitted this since I was making them for kids but it would have been a fantastic addition!)


In a food processor (or using a mixer), process the butter, sugar, cocoa, and salt until smooth, about 30 seconds, scraping the sides of the bowl as needed. Add the corn syrup and vanilla and process until just combined, 5 to 10 seconds. Scrape the sides of the bowl, and then add the melted chocolate and espresso and pulse until smooth and creamy, 10 to 15 seconds.

Baker's Delight: Kazakh Cheese Pastries

These savory pastries would be perfect for brunch or a snack or a dinner or any time. They are seriously delicious! They were a hit with children and adults alike. The buttery, flaky crust with the creamy cheese filling was pretty much perfect. I'm think these may be added to the Easter brunch menu this year.



KAZAKH CHEESE PASTRIES
adapted from Cooking for Kaz: Meals for Hope, Volume 2

Pastry:
1 ½ c. flour
½ tsp. salt
½ tsp. cream of tartar
8 Tb. butter
¼ c. ice water

Place flour, salt, cream of tartar, and butter in a food processor, Blend until texture is coarse and add water. Blend just until the mixture is combined and begins to mass together (add more water if needed). Place on plastic wrap, flatten to disk and wrap airtight. Refrigerate for at least 1 hour.

Roll dough on floured surface to 1/8 inch thickness. Cut out 24 circles with 3 inch water glass or biscuit cutter. Pleat edges of circles and fit in bottom of muffin tins. Preheat oven to 425 degrees.

Cheese filling:
1 egg
2 c. shredded cheddar cheese (I used sharp & 3-cheese blend)
3 T. grated parmesan cheese
2 Tb. parsley, chopped
2 T. chives, chopped

Beat egg in bowl. Add remaining ingredients. Spoon 2-3 tsp. filling in each pastry shell; spread level. Bake in preheated oven for 12-15 minutes or until the filling is golden brown. Cool on rack and serve warm.

*These could be made ahead, refrigerated and warmed in the oven.

Baker's Delight: Salted Toffee-Chocolate Squares

Honestly, I just didn't know what to make for today. It's been a long couple of weeks filled with illness at our house and my desire to cook and bake has been almost non-existant. And so, I looked at magazines and websites looking for something that would inspire me. I wrote to one of my friends that I was at a loss...and then, I happened to pick up my May 2010 issue of Everyday Food. I turned to the back for the index and instead, I came across this recipe. I had everything on hand and decided to give it a shot.

Oh. My. Goodness. These are amazing. They combine so much yumminess into one cookie that I can hardly stand it! They certainly aren't on the "healthy list" but they are worth the splurge. The coarse salt is just the perfect flavor addition - makes all of the flavors come alive. I had to walk away from the pan of cookies; in fact, I had to go upstairs so I would not eat more. So, without further ado, here is the amazing and easy recipe!



SALTED TOFFEE-CHOCOLATE SQUARES
(Everyday Food, May 2010)

13 graham crackers
1 bag (8 ounces) toffee bits
1 1/2 cups coarsely chopped toasted natural almonds
1/2 cup sugar
1 cup (2 sticks) unsalted butter
3/4 cup (4 ounces) bittersweet chocolate, chopped, or chocolate chips (I used mini chocolate chips)
3/4 teaspoon coarse salt

Preheat oven to 350 degrees. Line a rimmed baking sheet with foil. Place graham crackers in a single layer on sheet, edges touching. Sprinkle toffee bits and almonds over graham crackers.

In a small saucepan, bring sugar and butter to a boil over medium-high. Reduce heat and cook at a rapid simmer, swirling pan occasionally, until mixture is syrupy, 2 minutes. Immediately pour over graham crackers. Bake until sugar topping is bubbling, 12 minutes. Remove from oven and immediately sprinkle chocolate and salt over graham crackers. With a sharp knife or pizza cutter, cut into 2-inch squares. Let cool completely on sheet on a wire rack. (Store in an airtight container, up to 1 week.)
